I also moved recently and really dive a quarter of what I used to drive daily.I've been trying to convince the GF to move into or closer to Manhattan so we could both ditch our cars.

That would be a fantastic way to dive into REI.

He had the idea to valet park cars for people coming to dine and shop at night.

Leaving lights and things like that running all night and day for no reason. 

I'd be willing to help out nights and weekends in exchange for some guidance on how to get started.

I work full time so I'm looking for something that I can jump into with lower maintenance issues and not having to worry too much about toilet calls in the middle of the night, or leaking roofs.

Give yourself a place to retreat to when the day is over: finished bedroom and bathroom, usable kitchen.Buy a shop vac, soft bristle broom, a dustpan, and a big trash can, and sweep your living-area and path at night.
