I was told by some investors to have a separate llc for each individual property as to create a great safety blanket, although for tax purposes this seems like a lot of unnecessary work. is there any benefit to this?

"An ounce of prevention is worth a pound of cure": careful tenant screening, inspecting properties regularly, and perhaps most importantly: serving the notice to pay or quit promptly every time rent is late are key steps to take to avoid situations where one might need to evict.
