As long as the owner(s) of the LLC's do not knowingly engage in fraud or illegal activities, which would "pierce the corporate veil", you are personally protected from litigation. 

But giving him that level of control allowed us to not have to engage securities attorneys.  

I would engage a lawyer to draft the documents for you and give it to them to sign.
