And the other issue is the power supply wiring for electric units. eg. the wiring is not heavy enough to replace a cooktop or wall oven (single wall oven anyway) with a conventional stove with oven.

I'd just get a new fan, the same size or smaller (but as powerful) as the old one, put it in where the old one was and trim it out.

Sounds great, but politicians wouldn't let it happen, as it devolves power away from them (which they derive from their ability to dispense goodies to favored groups, and to effectively buy votes and maintain theri entrenched positions).
