You could block those, however, in your first photo of the kitchen you are trying to replicate with the oven on the left, where the taller window is with the grass cloth covering, you can keep your door (though you may need to move it over) and then move the sink to the right under the window. 

Weed cloth is useless in my experience.

I'll continue to drive boring cars, live in a boring house, and buy boring clothes.  

If you're nervous, start with a baby step of a turnkey property,  see if it's a good match.. and then get another one, maybe one that needs more work.
