I've used them on a kitchen rehab and for some buying/selling.

Currently it just has the stove fan that re circulates the air in the kitchen.  

In fact this is the kitchen wall in the next room, not even the main room.I said this would be short and rambled on but dang it was a lot of work, new appliances, doors painted, new fan, etc.

We will be rehabbing the kitchen, and the bathrooms, new carpet, and new paint.

You are asking this to establish what THEY think the condition is in.So after they give you their opinion, you ask them:OK Great...How old is the roofWhen were the kitchen and bathrooms last updatedHow old are the mechanicals.You force them to answer these questions where the answers are not "relative " ansers right?

I had heard of stories of people completing live-in flips where they have no kitchen or bathroom for a couple weeks.

Does anyone have any experiences (good or bad) with cabinet companies such as Kitchen Cubes (Pre-Assembled), or Cabinets to Go (RTA)?  

You would disturb the tenant's right to quite enjoyment by renovating the house and then you would essentially change the terms of their lease by adding another roommate to share the kitchen, bathroom, living room, parking, etc.
