If you're still early on in the process, my advice would be to read more (BP has some good books) + attend local meetups. 

Unfortunately if the previous owner also fights back during this process it could be very expensive (since a quiet action title is actually a lawsuit).

Since we didn’t have a pool and are not walking distance to the Broadwalk, we focused on interior design and that has helped, but we consistently lose out to Airbnbs with a pool, so we are working on maybe getting an above-ground pool and/or hot tub.

Ideally, we want the entire process to be managed locally to Hawaii to maintain authenticity and manage logistics effectively (stamps from Hawaii and not the mainland).Unfortunately, I haven't found a local company on the Big Island that offers these services.

I would walk thru the purchase process in Norway and see if you can do a quick resale and also make sure it is legal or you can’t be sued for tying up the property from the owners selling.  

I’m wondering how I should go about starting this whole process?

It cost more and takes more time for housekeeping to clean when there are extra people.I can't see that my bookings have increased whatsoever and as a traveler that booked a house through VRBO/Evolve last year, I found the booking process to be a little cumbersome. 

I know it is a ton of information to process and I have been going over this 5 times a day in my head.
