Probably a bit early, but I'd also be looking at Wise County and Parker County-Decatur and Weatherford are the bigger cities.

While owning properties in an LLC is a solid foundation for liability protection, it's wise to continually reassess and enhance your strategy.

And sure while the GF shouldn't have final say, I don't think it's wise relationally not to listen to your girlfriend throw in her two cents from time to time even she doesn't actually have any skin in the game.
