I was thinking about filling with composite sheet rock, waiting for it to dry, and re-sealing with latex caulk ORFilling the crap out of it with Gorilla glue, waiting for it to dry, and then re-sealing with latex caulk.

I don't know anything about California foreclosure law (or even if the property is in CA), but have heard that it is extremely borrower friendly, so you should talk to a CA foreclosure attorney before pulling the trigger.
