I can remember my college microbiology class where the first experiment was the professor having us bring in samples of cleaning agents (i.e., bleach, ammonia, popular cleaning solutions "guaranteed" to sanitize etc.) spread on Agar plates that were then incubated in a warmer.

Arthur,  I did that exercise using Excel's Solver. 

You need a large “sample” universe for it all to “even put”.  

Or do we get through that quick and into more advanced exercises for the majority of the course like practicing deal analysis, running numbers, finding/managing/contracting with contractors, corporate structure, etc?  

You can go out to Turno and get some bids on a sample property of the type you are looking at to get a better idea of costs.The older your hard systems are, the more it will cost to keep them up.

The size of the data sample required for accuracy is definitely key.
