But if you try to put on a sheetrock veneer, you do realize the trim and baseboards will have to come off first and be re-installed, otherwise you will have some strange looking areas where those meet the new sheetrock.

Could you resize the door i.e. it's a 36", and you could furr it out and reinstall a 30" gaining the 6" you need?

When we lost our lease, I took up that floor and had it reinstalled over a slab in a rental and it still looks great today at six years old.
