I've not seen a dishwasher pan before,  but once tried to modify a 24" pan for an apartment washer to use under a dishwasher (marginal success).

Non structural, go with Pacific Specialty.For structural remodels I would get a vacant property policy through Foremost or PS and a builders risk policy with US Assure.
