The city's Planning dept. approached me with the idea actually, as I was originally only going to build the house. 

With Airbnb prices rising, we loved the idea of investing in a few different small apartments scattered around the world so we would have a virtually free place to stay, and when we were not there we would make money off of sites like Booking and Airbnb.

I have some ideas on how I could do this from the other side of the world, but I would be curious in some other best practices for those who have done real estate from a substantial distance.

Does anyone have any ideas on how I can get insurance or property tax down?

If it is that good of a deal, I would go down to the county office and speak with them to learn the process and the timing it takes to get a permit. 

We had looked into listing on Roofstock early on and haven't revisited the idea which really led me to have some outdated ideas about how they operated.  

One idea might be to offer a discount or incentive for extended weekday stays—say, booking three or more nights—to encourage longer reservations.
