We do phone screenings, show only to those who pass our phone screenings, accept applications over a period of a few days, review the applications and prioritize them best to worst.

I'd prioritize the things you think would normally take you the longest to do yourself, budget them out, then see whats left that you might be able to do yourself to save a little money, so long as it doesn't extend your timeline. 

I feel like I still have many questions all the time, and at a point where I feel like I have no direction or where I should be spending most of my time and prioritize certain tasks.

agree with Account Closed ; the numbers will also help you set a limit of your renovation budget and prioritize the renovation items.
