We have been considering maybe not this next house but the following - finding a large house with maybe 4 or 5 large rooms and creating a targeted STR that focuses on each room having a complete office/bedroom set up for the people who are living this lifestyle.

The demand I saw for single families wanting a home in the country with a rural lifestyle, yet close to employment and amenities.

We want to travel and still be able to maintain a decent lifestyle (I like new vehicles :) ).

You can waste a lot of time trying to separate the BS and emotionally charged opinions from solid, factual content or search for competent training that's not merely intended to fund the lifestyle of some real estate guru-wannabe.If I were in your shoes again, I'd spend some time committing myself to searching this and other sites for names of trainers that provide type-specific education.
