If you shop and ask around, you should be able to find a painter that can do a walls, ceilings and trim for $1/sq ft (paint included), cheaper if the paint scheme is already the same.

If you guys had the ability to do a great job, there would be no need to hire a painter to do the last 20% of the work, rolling on topcoats on already beautifully prepped and primed walls and ceilings.

Serv-pro was there the same day removing drywall and carpet. 2 days later they started replacing drywall and replacing carpet pad. 4 days after flood they were done and painters/cabinet/baseboard people were in and out in 2 days.

I usually fill gaps with simple paper shims made out of painter's kraft paper rolls, stapled in with a manual staple gun (Arrow T50, tried and true). shave down rises with the block planes.
