You'd be hard pressed to get $850, as decent 3/2 SFRs here will start in the $850-900 range, (which can be found for $75k-$80k). 

My most pressing issue is a property I just bought for 256k that I need 50k in order to fix up so I can turn it into my first STR.

You may get lucky and find a lender that will do that but would be hard pressed to find someone that offers 100% financing.
