Seems like you're getting the worst of both worlds if you don't realize asset protection and add complexity/cost of an LLC. if you want anonymity the land trusts are a better vehicle.

Your demand is going to be sports cars, high end vehicles, etc. 

She has our mortgage payment and 2 vehicles in her name.

If your business bought a vehicle and you deprecated all at once  that is going to be a significant decrease in taxable income , but as seen above you can add it back for your income for the loan.In addition, if you have any debt on your personal credit report that you can show that the business has  paid the debt for 12 consecutive months you can exclude that debt payment from the debt to income ratio.

I work in the field most days and can travel to the property with my work vehicle.

Index funds and compound interest are also incredible investment vehicles that, as much as we hate to admit it, outperform a large percentage of real estate investments.
