The end goal is to be fully dedicated to investing but there's so much to learn and I don't have the risk appetite to also quite my 9-5 to fully dedicate to real estate.I would love to learn more about investment deals and how I can find ways to fast track my goals.

Only one bank account needed, but you'd have to track income & expenses to do transfer and year-end accounting.As @Nathan Gesner mentioned, not really worth it.You two could also open a joint bank account for collecting rent and pay expenses, just be sure to track everything.Do NOT do what @Paul De Luca stated about transferring title!

Just wait until a sec 8 tenant fails to recertify or loses voucher and you need to evict these people who have barely any money/credit to find another place.

Some lenders looks at age of the company and revenue (e.g. business line of credits) hence single LLC may be easier.
