The fact that you travel for line work could satisfy a the UW's concerns or supply a letter of explanation.

Since we don’t shop our interest rates around they gave us 7 year versus 5 year balloon terms.  

Get a strong pre-qual letter with an investor oriented and experienced lender (some of the best I've met on BP) and have a contingency plan.
