@Tony Castronovo - Normally for a hydrostatic test, which I think you were describing, the plumber uses a test ball which is inserted into the clean out to block water flow from the house. 

Drilling a hole into the pipes then simply inserting their thermo probe.

However that can be fixed by drilling a pattern of holes, inserting adhesive and using screws to temporarily hold the plaster in place until the adhesive dries.

The piers can be inserted through holes in the concrete and go deep enough to find stable ground.
