Initially, we bought the larger house 7 years ago because we had family members living with us at the time.

Another agent mentioned that they may still look up the members of the LLC. 

We are just forum members who contribute a ton.I think it is important to point out that these sorts of lists that they can make you aware of new areas, but they are not the end all be all of decision making.

If I ever plan to use a family member or friend who may not want to be fully involved in the process - what kind of documents would I need to provide that person that ensures their end is covered and could fully explain numbers, process, timeline, and security for them?

You could also form a new LLC with you both being members.  

And as a member to an organization that manages well over 10K doors I can say from 1st hand knowledge it would take a LOT of people.
