We read all the standard descriptions and begin to get clearer picture, but have an additional complication and are not sure how it changes the picture.In 2015 we bought a triplex.

There is a myriad of information available for every property even in the free trial version so you can get a great feel for the power of using this.It has information on the owner, property itself, mortgage, comparables, prior or current MLS listing information (the actual photos, description, DOM, etc), and more.  

Retain all records including emails, voicemails, contemporaneous notes you took, the MLS listing description (and print/save it before the agent can edit incriminating evidence out), contracts - everything.This is a mess.  

Should I list one house and then include some other options in the photos and description?

Only if something significant has changed for the property or you feel like the current description hasn't been helping. 

Sounds like your maybe your being too picky on finding your apartment deals by your description .

I see laundry listed as a room, but not under appliances or the listing remarks/description.

The description says that the basement has areas which need mortar repairs, a leak in the chimney, and signs of moisture in the first floor bedroom, but you've allocated $0 for an initial repair investment.
