If your goal is to protect your assets then insurance is your first and best line of defence. 

The fact that they did not argue their defence during the eviction, to prevent it, is evidence that what ever the are now claiming was made up after the fact.Hopefully common scenes will prevail and they will lose the suit.

That will be your first line of defence regardless of weather you have a LLC or not.
