This site is awesome, people willing to help from all over.I have spoken with a few accountants, they were great, but the two I spoke with really only offer accounting and bookkeeping, they don't really offer to train me to do my own bookkeeping, which is what I would like to do.  

Keeping track of the income and expenses for each unit can be easily accomplished with good bookkeeping procedures that record transactions by categories or registers.Ditto about checking with the landlord-tenant laws for your jurisdiction.

I love office work/book keeping and I would actually enjoy that part of it.  

Also doesn’t cope all that well with stress on occasions I’d also love to have her help out with bookkeeping, design, and stuff but also just lower the stress around the house.

My thinking at the moment is to bring on 2 people: a book keeper (monthly to do upkeep on accounting) and a virtual assistant.

Long distance can have complications, those can be lessened (not eliminated) with setting up a strong network of property management teamed with book keeping and accountants.

Other wise you increase your bookkeeping and reporting responsibilities and you run a higher likelihood of pushback if the bill is high because you are the owner. 

  Concerning real estate investors, how much demand is there for a bookkeeper?

I do suggest hiring a book keeper to help keep things in order and easily hand off to your accountant.
