If there is a gap more than 1/4 inch between the Sheetrock and wall use spray foam to fill the gap and when it dries trim it away flush with a razor.

I would really appreciate some input on creative ways to trim budget on insurance.

Depends on how extensive the remodel work is, a cosmetic flip paint, trim, cabinets, vanities don't trigger permits here in WA state.

However, in 2-3 years, they will require regular trimming, which will cost money.
