You can always cut and face your countertops flush with the side of the cabinet(s), so they do not protrude into the cavity for the range.The range will normally be a little deeper than your countertops.If you do not have the width for a 30" range, then an "apartment" sized (24") range is an option.

I think what Charlie is saying is instead of starting a fund simply broker the loans to an other broker that has a ton of money and you keep part or all the points...much less headache.
