I realize that I can move it to a land trust after closing, but, I would miss out on the benefit of anonymity by doing so.It seems like I am stuck buying this in my own name and then moving to a land trust after close.

I set up my LLC for anonymity and some liability protections and to keep records cleaner.  

Having an out of state LLC be a holding company helps add to anonymity and to discourage lawsuits.

Normally each parcel is purchased separately, and you're negotiating with each seller with different purchase offers.Many times a developer will use a broker to help submit anonymous purchase offers. 

I like the anonymity of having one.  

Managing: My family does construction and would be happy to do the work ourselves, but I am wondering if the payment and anonymity offers enough value to add my current property management company in the mix on the 5-unit?  

A trustee as the recorded legal title holder can preserve proper chain of title custody while providing really nice anonymity to boot if you want some additional privacy.
