I am a bit biased toward using PPG products like their 6-7 (http://www.ppgpaints.com/products/interior-exterio...) or 6-15 (http://www.ppgpaints.com/products/interior-exterio...).The block is very porous, and these products are thick enough to fil it in and give you a sealed surface.

Now, if you're not a professional, how can I be assured that all the doors actually close or even stay open, that the windows seal, that trim actually fits as it should without filler or that a joist you replaced was properly sized?

it is on a crawlspace so the floor would come up to the baseboard then I would have to paint the floor with Killz to seal in the smell.

The butcher block countertops at Ikea were a thought because although you do have to seal them about every 6 mos., if they stain, you can just lightly sand them out and reseal to a new looking counter.My brain is fried at this point and any and all thoughts are appreciated.
