So any dollar I can get from it, for free is a gain, even if taxes utilities etc. etc. cost me money.End of the day, I am getting my dream house.. with (according to your numbers) 30 dollars of allowance to go to burger king to eat the one dollar menu every day of the month....

Meaning the all-in costs (taxes, insurance, marketing, rent and any additional CAM fees) must be less than their max "operational percentage".Example: Restaurant 'A' does $550/sqft in sales (which is typical of a burger joint, or a Chipotle).

You can not always increase prices to the consumer to compensate so it starts eroding profit margin with the same sales.This is why regardless of the marketplace the cheese and pepperoni etc. will not cost you above a certain price per pound with the big guys.
