I've read that hiring a private insurance adjuster can be a good idea, and that I should ask the insurance to provide for housing/hotel, as well as keep all receipts for eating out since we don't have a kitchen anymore.Any info & advice will be greatly appreciated!

At this point, we want to move out the tenant and providing generous move out package - one month hotel stay, one month rent back, hold fee for next apartment etc, but the tenant is not -cooperating and also blackmailing us based on situation.

Also, if you live in one of the units you could do AirBnB for the other units and I don't think it would be considered a "hotel" since you live in the property as well (check that though).
