Certainly wouldn't have much issue showing credit card statements of local restaurant/grocery/gas purchases in that area through the year, but that seems a bit asinine to track or even think they'd request. 

Seller requests buyers cooperation in such an exchange and agrees to hold Buyer harmless from any and all costs, claims, liabilities or delays in time resulting from such an exchange.

It's something that you can request as a condition of COE, and a good realtor working on your behalf would have known this.  

How would I do that - send them a formal invoice or request, or can it be less formal like a simple email? 

I guess they could be seeing if you have anything worth stealing, but it could be just a request to see how the house flows etc.
