Working with Virtual assistants

I have recently hired two Virtual assistants for my real estate business and I am planning to start working with them from coming Monday.
Few questions on the process:

1: How can I track their progress ?
2: What telephone service they should use for cold calling people in US ?
3: What all tasks I can assign them ? 
4: Any other suggestions ?

1. Where did you hire them from? Upwork? If so then you can track their work through that tool.

2.They can get a Skype Number.

3. What do you need done? What is something that you shouldn't be spending your time on that someone else can do for you?
