Online notarization does seem like a good one to me. Although it takes one person out of a job. 
How about scheduled conference reminders syncing with your cell or sending previews to clients via cell phone.

I use a fujitsu scansnap s1500. It is a super-fast hassle free scanner. It comes with software that automatically stores the files as PDF documents. Files can be saved to anywhere on your computer. I save to a file tree that is synced to the cloud via Sugar Sync.
