Mortise Lockset (interior) Options

We are finishing up a Single Family Flip with an ARV of 80k. Pretty much a full renovation: Refinished floors, all new paint, kitchen cabinets, granite countertops, gutted both bathrooms, new tile in bathrooms, tile shower, new vanitys, carpet, exterior paint, new garage, the whole nine yards.

My question is regarding the interior lockets. All of the interior doors (7) are nice solid wood 6 panel doors, but they have the old style mortise locksets that are not in the greatest shape. I want to replace them and have three options which I listed below. My favorite is the Satin Nickel w/ metal knob, but its also the most expensive. I feel like the first two seem dated, and will take away from all the other renovations I made.

What are your thoughts?
