Help me name a sandwich shop

Six months ago I helped a chef friend open up a restaurant on the square of the county seat an hour east of Dallas. It's a southern comfort food type diner called Buttermilk's.

A small space behind us opened up, so we leased it in order to open up a sandwich shop. The working theme is New York Deli meets southern/Texas hospitality. Chef Ben is the proprietor and we use his name/brand in promoting the cafe, Buttermilk's. The sandwich shop will be next door, but not necessarily related, brand or marketing-wise.

The town is Canton, which is best known for a huge monthly flea market.

The sandwich shop will serve about 6 varieties, plus wraps and salads. It will mostly be a "to go" shop, as it is small. The building was built in 1890, which is about as old as they get in this area, Nice character. Brick exterior, distressed old wood floors. We will be finishing out in corrugatef tin and cedar.

We have been trying to come up with a great name, but haven't found it yet.

Suggestions?
