Does my STR need a small trash can in each room?  can I get away with dollar tree trash cans?

We have trash cans in each bedroom as well as bathrooms and kitchen.

Plus 1 more in the living room. I would rather have people toss garbage in a trash can than leave it laying around or kicking it under the bed.

We kept extra bags in the bottom of the can under the current trash bag. Easy for guests to change if they get full during their stay, and easy for cleaners afterwards....

Kitchen and bathrooms. However, a larger home may consider another can or two in certain locations based on proximity to the kitchen or bathroom. For example, I would place one in the game room if it is located on the opposite end of the hallway from the bathroom.

Agreed with above- kitchen & baths only. Only exception would be if you have a game room or extra living area that is far from the kitchen, then it would be a good idea.

Keep in mind that someone has to change the trash bags each turnover.

Perhaps based on your target market? Personally, I'd prefer dollar-tree ones (if basic, uncluttered look) over none in the room (bedroom, whatever) because I want to encourage trash being put away. In our 4-bedroom, we have one in every room because 1) the need for it in bathrooms, kitchen, and laundry room is obvious and 2) living room / bedrooms, it's helpful (and easy) for people with allergies (kleenex), snacking in front of the tv, etc. For people on vacation, I want their experience to not only be seamless but comfortable. But it's also mildly higher maintenance. If you know your target market and believe they truly wouldn't care (or be impacted- especially if it's very price-sensitive), you're probably fine with less.
