LLC for ownership of Property

Hey All been awhile since I posted but I had a question for those of you that might know a bit more than I. My partner and I have a couple commercial loans and a couple smaller personal real estate loans. We are looking to pay off a couple of our smaller ones so need some advice or input.

We want to move some of these into LLCs or other entities the problem is they will call the loan if we transfer the title. does anyone have any pointers on this?  Obviously if its paid off it will be easy to move this over but we cannot pay them all off right now :) Also, we want to mitigate frivolous lawsuits do you recommend an insurance policy? we have an umbrella but just checking to see what people recommend.
