It's not an unreasonable request. We've had tenants request such when they were applying for housing assistance or other assistance with their living expenses or educational expenses.
If a tenant ever pays with cash, we write a receipt. No matter how a tenant pays, if they request a receipt we don't question it and oblige.
Invest in a receipt book or create a receipt that you can send electronically.
In addition, check the landlord-tenant laws for your jurisdiction. For example, in Washington State RCW 59.18.063 states "A landlord shall provide, upon the request of a tenant, a written receipt for any payments made by the tenant."
I hope you were just venting when you wrote that response letter. Don't send it. You would do well to examine why you are bothered by tenant requests. What you see as demanding, may be just a different communication style than you're used to. Seek to understand.
