Hiring Day Labor Without Soc Sec Number

I was wanting to know, if we hire day labor on a daily basis that they don't have a social security number, how should we be doing this as far as the taxes go ? If they are paid with cash out of an ATM at the end of the day, what does that action mean to our company ? Thanks
