Rent to Own Kansas City

Hey everyone, my fiancé and I are looking at possibly purchasing a rent to own property. We haven’t worked with anyone yet but are wondering if anyone in the area has any deals. The back story is that I as of last month had to resign from my job because of a back injury. I’ve been doing Uber eats since then while doing physical therapy and I’m making more money doing that than I did at my job. I was just told that in order to get a mortgage I would have to provide either 2 years of w-2 or 2 years of self employment income verification. So in my current situation I wouldn’t get approved for a mortgage even though I’ve been continuously employed since college (4 years.) my and my fiancé’s credit scores are 740 and 820. I’m not making a ton but in the 4 years we’ve lived together we’ve never once been late on a rent payment, never missed a payment or anything like that. Our lease will be up at the end of September and our apartment complex has raised our rate yet again (nearly 20 percent over the last four years.) Even though the complex has had a ton of violent crime over the past six months including a murder less than a month ago. Any help would be appreciated
