Backsplash tiles and Drywall paper paper

I’m trying to remove the old backsplash they are at least 20-25 years old.

It’s coming out with the drywall paper. I tried to break it but it’s coming out with drywall paper.

Do I need to install the new drywall or repair with drywall compound.

Can I install new backsplash without drywall paper?
