Virtual assistants

I have heard people recommend using virtual assistants, both in the BP podcast and in The 4-Hour Workweek, and I have been considering it but honestly I don't know how I could use a virtual assistant. 

People who do use virtual assistants, what kind of work do you have them do? 

Also, what platform do you recommend to find a virtual assistant? (I have heard of oDesk which I believe changed to Elance and now to Upwork.)
