Fastest way to archive old documents?

Hey all!

As the title says, I'm looking for a fast way to archive old paper files. My storage room is brimming with boxes of all shapes and sizes, some filled with student books, some with family photos, others with office documents my dad has brought over, etc. 

I want to handpick which ones need saving still, and then, I want to digitize those to preserve them better. We actually have a scanner in the house, so this will be a good exercise for it. But I don't know which app to install to help me with this, I know some programs can speed up PDF organization-related tasks, but I've never used one myself. 

So, does anyone have recommendations for an app with built-in optical character recognition, logical UI, and easy-to-learn functions? I'd prefer something with a free trial as well, I'm hoping to get this done over a single weekend, but we'll see...
