Perfect number of bed rooms?
I do not have any experience with 3 or 4 bedroom apartments. For you experienced land lords out there. What problems come with larger apartments? What is your preferred apartments size and why?

It depends on the market and how it will be used. In Florida's vacation destinations - like beach towns - the more bedrooms the better. Four bedrooms are great for families and visitors who will be staying a full season and for the guests who show-up during that time. The best indicator will always be the market. Look at what the rent and demand is for a 3-bedroom house and then a 4 in your specific market. You'll quickly see if there is a demand and if it's worth doing based on the rent price.
