Evicting a Tenant Who Eventually Pays Up

I just filed for eviction on a tenant for the second month in a row for nonpayment. Last month she was late, and paid after I filed for eviction. I told her I wasn't doing this again. Today is Nov 19 and she still hasn't paid. I'm done with games. I'd like her out. 

However, I would bet my life once she receives the summons in the mail she will pay before the court date. She did this last month, and had done it to the previous owner. So she has now been sent 3 eviction summons in the last six months. 

What happens if she does pay? Should I just not cash the check, kick her out, and then cash it once the legal proceedings are over?

Furthermore, how tough will it be to rent the place out in mid December?
