@Stella Xu we shouldn’t overlook the fact that as companies find efficiencies in managing remote workforces that more offshoring will possibly occur.

Renovating MHs is a gamble.

While living here, my husband is able to benefit from 0 capital gains on earnings, so, for example, we could instead put this all into an offshore investment account, and sell off everything prior to leaving here, zero gains.

But at that point, you're gambling on the appraiser's willingness to work with you to basically evade municipal codes, and I personally wouldn't take that bet.

Yes it is somewhat gambling.

If you bet on market appreciation you are gambling. 

Heck,  I'll even throw in some gambling money!

I also don't know that I really advocate for stocks either- I'm sure I'm going to get flack for this but stocks have always struck me as high class gambling. 

Much of their income is funneled through offshore corporations and much of their assets are held in corporations in other countries.
