One of the reasons for the bank statement requirements is so the lender can set up an ACH for payments. 

I find many people go this route but they end of causing a ton of heart ache come tax time and pay a lot in fees and company registrations which setting up this structure could be an overkill

No have not heard of this; I can't imagine the accounting head ache if SSA actually offered that.

If he were to wrap the existing loan in an installment sale to you, then use a loan servicer to collect your payments that could be set up on automatic ACH, plus pay the underlying before dispersing funds to him each month, before long he'll forget the underlying exists.
