It can be a professional server or anyone that is a resident and over 18, just not a friend, SO, partner etc.

I just bought a inexpensive $300 laptop to act as my camera server.

It turned into a huge fiasco, but after a lot of screaming and wailing, they were finally gone.In hind site, I would have used a process server to deal with them, because I was drawn into too much of their drama.  

Just sayin.Just hire a process server, they'll track him down and serve him.

If you are out of state, in the future you may want to work with a local attorney who will take care of the required legal steps and work with a process server for the five day notice and eviction.
