You could box in a upright to accomidate the wiring like a support column.I'd keep the drop down that boxes the ceiling area of kitchen, I'd keep sink in same location and just make the knee wall surround same height as counter opening now,  Add a wider counter top to the length of knee wall so it will make bar stools work. 

I actually have a single family boarded up right now that we are planning to tear down and build a duplex and have put it on hold.  

Do a couple of flips and build your contractor list and your experience first.Also, keep in mind rates are going up and the economy is headed down so there is more risk than usual in building from the ground up right now.
